🥒🧀 Cheesy Zucchini & Carrot Fritters Recipe

Ingredients:

  • 1 medium zucchini, grated
  • 1 large carrot, grated
  • 1 egg
  • ½ cup shredded cheese (cheddar or mozzarella)
  • ¼ cup flour
  • 2 tbsp breadcrumbs
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Grate zucchini and carrot, squeeze out excess liquid.
  2. In a bowl, mix vegetables, egg, cheese, flour, breadcrumbs, garlic, salt, and pepper.
  3. Heat oil in a pan.
  4. Spoon mixture and flatten slightly.
  5. Fry until golden on both sides.
  6. Drain on paper towels and serve hot.
