1. Prep the Bacon or Sausage:

2. Grate the Potatoes and Onion:
- Grate the potatoes and onion finely (use a food processor or box grater).
- Squeeze out some excess liquid, but not too much — you want some starch to help bind.
3. Mix the Batter:
- In a large bowl, combine the grated potatoes/onion, eggs, salt, pepper, and optional herbs/garlic.
- Stir in the cooked bacon/sausage and a bit of the rendered fat for flavor.
4. Bake:
- Preheat the oven to 375°F (190°C).
- Grease a baking dish (ceramic, cast iron, or loaf pan) with butter or oil.
- Pour the potato mixture in and smooth the top.
- Bake for 60–75 minutes, until the top is golden brown and crisp.
5. Cool and Serve:
- Let it cool slightly before slicing.
- Serve warm with sour cream, fresh herbs, or even pickles on the side.
