
Crispy Parmesan Zucchini Rounds
Ingredients
- 2 medium zucchinis, sliced into ¼-inch rounds
- ½ cup grated Parmesan cheese
- ½ cup breadcrumbs (Panko for extra crisp)
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp olive oil
- Optional: chopped parsley or Italian seasoning
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Brush zucchini slices lightly with olive oil.
- Press each zucchini round into the Parmesan mixture, coating both sides.
- Arrange in a single layer on the baking sheet.
- Bake for 20–25 minutes, flipping halfway, until golden and crispy.
Tips
- For extra crispiness, broil for the last 2–3 minutes.
- Serve with marinara, ranch, or garlic aioli.
- Air fryer option: 400°F (200°C) for 10–12 minutes, shaking halfway.
