Ingredients

  • 2 medium zucchinis, sliced into ¼-inch rounds
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (Panko for extra crisp)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • Optional: chopped parsley or Italian seasoning

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix Parmesan, breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Brush zucchini slices lightly with olive oil.
  4. Press each zucchini round into the Parmesan mixture, coating both sides.
  5. Arrange in a single layer on the baking sheet.
