Instructions:
- Marinate chicken:
- In a bowl, mix buttermilk, salt, pepper, paprika, and garlic powder.
- Add chicken and marinate 10–30 minutes.
- Prepare coating:
- In another bowl, mix flour, cornstarch, paprika, salt, and pepper.
- Bread chicken:
- Remove chicken from marinade, letting excess drip off.
- Coat thoroughly in flour mixture.
- Cook:
- Fry: Heat oil to 350°F (175°C). Fry chicken 3–4 minutes per side until golden and cooked through.
- Bake: Preheat oven to 425°F (220°C). Place on greased rack, spray lightly with oil, bake 18–22 minutes, flipping halfway.
- Make sauce:
- Mix all dipping sauce ingredients until smooth.
- Serve:
- Serve hot with dipping sauce.
