
Ingredients:
- 1 medium zucchini, grated
- 1 large carrot, grated
- 1 egg
- ½ cup shredded cheese (cheddar or mozzarella)
- ¼ cup flour
- 2 tbsp breadcrumbs
- 1 clove garlic, minced
- Salt and pepper to taste
- Oil for frying
Instructions:
- Grate zucchini and carrot, squeeze out excess liquid.
- In a bowl, mix vegetables, egg, cheese, flour, breadcrumbs, garlic, salt, and pepper.
- Heat oil in a pan.
- Spoon mixture and flatten slightly.
- Fry until golden on both sides.
- Drain on paper towels and serve hot.
