Egg Muffins (Like the Photo)

Ingredients

  • 6 large eggs
  • ¼ cup milk or cream
  • Salt & black pepper to taste
  • ½ cup shredded cheese (cheddar, mozzarella, or mix)
  • ½ cup chopped green onions
  • ¼ cup chopped bell pepper
  • ¼ cup chopped onion
  • Optional: parsley, spinach, cooked bacon, or mushrooms

Instructions

  1. Preheat oven to 180°C / 350°F.
  2. Grease a muffin tin well (very important).
  3. Divide vegetables evenly into muffin cups.
  4. Whisk eggs, milk, salt, and pepper.
  5. Pour egg mixture over veggies (¾ full).
  6. Sprinkle cheese on top.
  7. Bake 18–22 minutes until set and lightly golden.
  8. Cool 5 minutes, then remove.

Tips

  • Use silicone muffin cups for easy release
  • Great for meal prep (keep in fridge up to 4 days)
  • Reheat in microwave or air fryer
