Ingredients:
- 1½ cups (190 g) all-purpose flour
- ¾ cup (150 g) sugar
- ½ cup (120 ml) milk
- ⅓ cup (80 ml) vegetable oil or melted butter
- 2 eggs
- 1½ tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat oven to 350°F (180°C). Line a muffin pan.
- Whisk eggs and sugar until light.
- Add milk, oil (or butter), and vanilla. Mix well.
- Stir in flour, baking powder, and salt until smooth.
- Fill liners ¾ full.
- Bake 18–22 minutes until a toothpick comes out clean.
- Cool and serve plain or with powdered sugar or frosting.
