Roczki Cookies (also known as Kolacky, Kifli, or Crescent Cookies) are buttery, flaky pastries filled with sweet fruit preserves, nuts, or poppy seed filling. These traditional cookies are popular in Polish, Hungarian, and Czech cuisines, often made for holidays, weddings, and family gatherings.

๐ Ingredients (Makes about 24 cookies)
For the Dough:
โ 250g (2 cups) all-purpose flour ๐พ
โ 200g (7 oz) unsalted butter, cold and cubed ๐ง
โ 200g (1 cup) cream cheese, softened ๐ฅ
โ 1 tbsp sugar โ
โ 1 pinch salt ๐ง
For the Filling:
โ ยฝ cup apricot, raspberry, or plum preserves ๐๐
โ ยฝ cup ground walnuts, poppy seeds, or sweetened cream cheese (optional) ๐ฐ
For Dusting:
โ ยฝ cup powdered sugar โ
๐ฉโ๐ณ Instructions
1๏ธโฃ Make the Dough
- In a bowl, mix flour, sugar, and salt.
- Add cold butter and cut it into the flour using a pastry cutter or fork until it forms a crumbly texture.
- Add cream cheese and mix until a soft dough forms.
- Wrap the dough in plastic wrap and chill for 1-2 hours (or overnight).
2๏ธโฃ Roll & Fill
- Preheat oven to 180ยฐC (350ยฐF).
- Roll out the chilled dough on a floured surface to about โ inch thick.
- Cut into 2-inch squares or circles using a cookie cutter.
- Place 1 teaspoon of filling in the center of each piece.
- Fold the dough over the filling diagonally or roll into a crescent shape and press the edges gently to seal.

- Place cookies on a lined baking sheet.
- Bake for 15-18 minutes, until light golden brown.
- Let them cool slightly before dusting with powdered sugar.
