Crème Brûlée Cheesecake

For the Crust:

  • 2 cups graham cracker crumbs (or digestive biscuits)
  • ½ cup melted butter
  • 2 tbsp sugar

For the Cheesecake Filling:

  • 24 oz (680 g) cream cheese, softened
  • 1 cup sugar
  • 1 cup heavy cream
  • 4 eggs
  • 1 tbsp vanilla extract

For the Crème Brûlée Topping:

  • ½ cup sugar (for caramelizing)

Instructions (brief):

  1. Mix crust, press into pan, bake 10 min at 180°C (350°F).
  2. Beat filling, pour over crust, bake 50–55 min.
  3. Chill, sprinkle sugar on top, torch or broil until caramelized.
