
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and gently mix. Do not overmix — a few lumps are okay.
- Heat a non-stick pan or griddle over medium heat and lightly grease it.
- Pour about ¼ cup of batter for each pancake onto the pan.
- Cook until bubbles form on the surface and the edges look set (about 2–3 minutes).
- Flip and cook the other side until golden brown.
- Repeat with the remaining batter.

- Don’t overmix the batter — this keeps the pancakes soft.
- Let the batter rest for 5 minutes before cooking.
