
Instructions
- In a bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- In a saucepan, heat the milk over medium heat until it begins to warm (do not boil).
- Slowly pour some of the warm milk into the egg mixture while whisking continuously.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly.
- Continue stirring until the cream thickens into a smooth custard.
- Remove from heat and add the butter and vanilla extract. Stir until fully combined.
- Pour the pastry cream into a bowl and cover the surface with plastic wrap to prevent a skin from forming.
- Let it cool completely before using.
