📝 Ingredients
- 3–4 lb (1.5–2 kg) beef chuck roast
- 2 tablespoons olive oil
- Salt and black pepper (to taste)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme (optional)
- 1½ cups beef broth
- 6 medium potatoes, peeled and cut into chunks
- 2 large onions, sliced
- Optional: 2 carrots, chopped
👩🍳 Instructions
1️⃣ Season & Sear
Pat the roast dry. Season generously with salt, pepper, garlic powder, and thyme.
Heat oil in a large Dutch oven over medium-high heat.
Sear the roast on all sides until browned (about 3–4 minutes per side).
2️⃣ Add Vegetables
Add sliced onions around the roast.
Pour in beef broth.
Cover and reduce heat to low.
3️⃣ Slow Cook
Simmer covered for about 2½–3 hours, until the meat is fork-tender.
Add potatoes (and carrots if using) during the last 60–75 minutes of cooking.
(Alternatively: Cook in a 325°F / 160°C oven for the same time.)
4️⃣ Serve
Remove roast and let rest 10–15 minutes before slicing.
Spoon the soft onions and potatoes around the meat and drizzle with pan juices.
