Shrimp and Sausage Gumbo (Served Over Rice) 🍤🌭🍚

Ingredients

  • 1 lb (450 g) shrimp, peeled and deveined
  • 12 oz (340 g) smoked sausage, sliced
  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken or seafood broth
  • 2 bay leaves
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • Salt & black pepper, to taste
  • Cooked white rice, for serving
  • Chopped green onions or parsley (optional)

Instructions

  1. In a heavy pot, heat oil over medium heat. Whisk in flour and cook, stirring constantly, until dark brown (about 15–20 minutes).
  2. Add onion, bell pepper, and celery to the roux; cook until softened.
  3. Stir in garlic, paprika, Cajun seasoning, salt, and pepper.
  4. Gradually add broth, stirring to combine. Add bay leaves.
  5. Simmer 25–30 minutes until thick and flavorful.
  6. Add sausage and cook 10 minutes.
  7. Add shrimp and cook 3–5 minutes until pink.
  8. Serve hot over rice. Garnish if desired.
