1. Make the Filling:
- In a large bowl, beat together peanut butter, softened butter, and vanilla until smooth.
- Gradually mix in powdered sugar until a thick dough forms.
- Stir in 1 cup of the crushed Butterfingers.
2. Shape the Balls:
- Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- Freeze or refrigerate for 30 minutes to firm up.
3. Melt the Chocolate:
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
4. Dip & Decorate:
- Dip each chilled ball into melted chocolate, coating completely.
- Place back on parchment. While wet, sprinkle a bit of extra crushed Butterfinger on top (optional but recommended!).
5. Chill to Set:
- Refrigerate for at least 15โ30 minutes or until chocolate is set.
