  1. Sauté the onion in oil over medium heat until soft and translucent.
  2. Remove from heat and stir in the paprika (to avoid burning it), then immediately add garlic and tomato.
  3. Return to heat. Add the potatoes, sausage slices, and bell pepper. Stir well to coat with the paprika mixture.
  4. Pour in enough water or broth to just cover the potatoes.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce to a simmer. Cover and cook for about 25–30 minutes, or until the potatoes are tender and the stew thickens slightly.
  7. Serve hot with crusty bread or fresh pickles.

🍽️ Tip:

Some Hungarians mash a few potatoes at the end to thicken the stew naturally.
